Definition:
  1. "Number of slaughtered bovines, pigs, sheep, goats, equidae, poultry, and ostriches" is the number of carcasses of animals whose meat is deemed fit for human consumption.
    "Live weight" is the live weight of slaughtered bovines, pigs, sheep, goats, equidae, poultry, and ostriches before their slaughter, expressed as the empty body weight.
    "Carcass weight" is the cold weight after slaughter and dressing of slaughtered bovines, pigs, sheep, goats, equidae, poultry, and ostriches whose meat is deemed fit for human consumption. (The cold weight can be obtained by subtracting 2% from the weight recorded warm 60 minutes for cattle or 45 minutes for pigs, at the latest, after the animal is bled – included in the definition during the period 2009-2024).
    "Carcass" means:
    - for bovine animals, the whole body of a slaughtered animal as presented after bleeding, evisceration and skinning, presented without the head (separated from the carcass at the atlanto-occipital joint); without the feet (severed at the carpometacarpal or tarsometatarsal joints); without the organs contained in the thoracic and abdominal cavities with or without the kidneys, the kidney fat and the pelvic fat; and without the sexual organs and the attached muscles and without the udder or the mammary fat;
    - for pigs, the body of a slaughtered pig, bled and eviscerated, whole or divided down the mid-line, presented without tongue, bristles, hooves, sexual organs, flare fat, kidneys and diaphragm;
    - for sheep and goats, the whole body of a slaughtered animal as presented after bleeding, evisceration and skinning, presented without the head (separated at the atlanto-occipital joint); without the feet (severed at the carpometacarpal or tarsometatarsal joints); without the tail (severed between the sixth and seventh caudal vertebrae); without the udder and sexual organs; with the kidneys and kidney fat; and without the other organs contained in the thoracic and abdominal cavities;
    - for equidae, the body of a slaughtered animal as presented after bleeding, evisceration and skinning, without the head, the tail, the udder and parts of limbs; kidneys and kidney fat are part of the carcass; the pelvic fat is not included;
    - for poultry and ostriches, the animal plucked and drawn, without head and feet and without neck, heart, liver and gizzard. (The carcass of poultry known as ‘65 % chicken’, or otherwise presented - included in the definition until 2024).
    "Bovines, pigs, sheep, goats, equidae" means:
    - cattle (Bos taurus L.) and water buffalo (Bubalus bubalis L.), including hybrids such as Beefalo; meat of these animals is presented as beef and veal;
    - domestic animals of the species Sus scrofa domesticus Erxleben; meat of these animals is presented as pigmeat;
    - domestic animals of the species Ovis aries L.; meat of these animals is presented as mutton and lamb;
    - domestic animals of the subspecies Capra aegagrus hircus L.; meat of these animals is presented as goatmeat;
    - domestic animals of family Equidae, i.e. horses, donkeys, and their hybrids; meat of these animals is presented as horsemeat.
    "Poultry" referes to:
    - domestic chickens (Gallus gallus L.), turkeys (Meleagris spp.), ducks (Anas spp. and Cairina moschata L.), geese (Anser anser domesticus L.), ostriches (Struthio camelus L.) and other poultry fowl not elsewhere classified, such as quails (Coturnix spp.), pheasants (Phasianus spp.), guineafowl (Numida meleagris domestica L.) and pigeons (Columbinae spp.). Birds raised in confinement for hunting purposes and not for meat/egg production are excluded; meat of these animals is presented as poultrymeat.
